Change Color of Completed Status from Red to Green

We need a way to change the color of the Completed task status from Red to Green; or at least remove it from the Kanban views. We typically use green to indicate completion (and Goodness) and red to indicate a problem.

This is possible from your Account Settings > Project Status page.

I'm new to Project.co, so I don't know if this is a new addition or not.

You can click on the edit button next to the word "Status" at the top and change the color or name of the status, add new statuses, and change the order of the statuses. However, this is an "Account Level" change, so it changes the status options for all of your projects - just to be aware of that. It will also update the Kanban view "buckets".
